But only one started as a local subscription service.

I learned to connect the flavors of specialty coffee with industry lingo while roasting in my garage. A tale as old as time.. or at least as old as specialty coffee.
So I created a program to share with my neighbors in South Minneapolis, helping each subscriber build a personal connection with their coffee.

What is Specialty Coffee, Anyway?
There is no agreed-upon definition of specialty coffee. Of the bodies that do offer one, like the Specialty Coffee Association and Coffee Quality Institute, a demonstrable 'lack of defects' in sensory analysis represents a common theme.

Another is 'traceability.'
Do you know where your coffee came from? Well, it just might be specialty coffee! Many roasters of high quality or gourmet coffee are able to list data points on the bag. These include origin information like farm identification and processing methods.
Specialty coffee roasters value 'freshness' in both green (unroasted) coffee and the finished product. Like any other agricultural commodity, coffee beans are prone to spoilage if not stored in proper conditions.
In fact, the small and rounded "coffee bean" is not a bean at all, but rather the seed of the coffee plant. They are usually considered 'fresh' for 6-12 months after harvest.
How To Harvest Coffee
Two seeds must be removed from each coffee cherry. The method employed is referred to as 'processing' and will impact the flavor of the coffee when roasted!
I think of coffee processing as spectrum, with 'washed process' on one end and 'natural process' on the other.
